Line-caught Mackerel, Strawberry & Wasabi

Preparation time: 20 mins   -    Cooking time: 5 mins   -    Serves: 2
Ingredients
  • 240 grams - Fresh mackerel
  • 15 grams - Olive oil
  • 4 grams - Fleur de Sel
  • 15 grams - Brunoise Celery
  • 20 grams - Fresh strawberries
  • Garnish - Oxalis
  • 35 grams - Sherry vinegar
  • 75 grams - Liquid honey
  • 150 grams - Vegetable oil
  • 30 grams - Wasabi
Method
  1. Mix the mackerel, olive oil and Fleur de Sel with the celery and then place in a ring approx 9.5cm diameter
  2. Garnish with the diced fresh strawberries in 5 small piles, equidistant, on top of the mix.
  3. Alternate each pile with the oxalis leaves.
  4. Blitz the vinegar and the honey together; emulsify with the oil.
  5. Add the wasabi, and mix well.
  6. Check for additional seasoning.
  7. Dispense into a squeezy bottle.
  8. Dot around the Wasabi & Honey dressing to the outside of the ring (onto the plate)
